My power plant has a power project which I am working for the school and was thinking that any kind of motor would be best, especially what is the water, and voltage levels? I believe this is about 200 pounds but I'm not sure if you can give me a general rule of choice for motorcycles which will be very nice. We are seeing about 1000 watts and 36 v, but I have no idea what I'm looking for, to be honest.

It is all you need to do with the acceleration you are looking for. At constant speed, the motor should only compensate for the friction loss.
Also, there will be a big motor for the same running time in the battery bank. A significant weight of moving around two hundred pounds.
In any case, it will be a compound DC motor to speed control and good traction torque. I will lie around no DC motors and you will use all 'trial and error methods trying to see what kind of results. Start small.
